I like pretty much everything...
Although I find I don't like too much country since it turned into white gangster rap with pickup trucks. (I slightly exaggerate, but it has the same "look at me, I'm rich and famous" mentality these days.)
On the other hand, there some I do like, although I admit it falls more into "Bluegrass"

And not just country-inspired rock either, I like the real deal. Bakersfield, of course, but also some mainstream country and just about anything with a G-run in it. My all-time favorite C&W album is probably this one.
