Food as Medicine

Most of us (way too many of us at least) live on the world's crappiest diet. It's called the Standard American Diet, or SAD. It consists of a preponderance of carbohydrates, sugars, processed foods and unhealthy fats. We also commonly eat three main meals a day and snack in between. In terms of what it is doing to our bodies, this is suicide on the installment plan.

Americans are fat and getting fatter. Obesity and diabetes are rising at an alarming rate and people are panicked about a shortage of insulin to treat all the diabetes coming down the pike...when diabetes (type II) can be reversed in a matter of weeks with the right diet.

We now know enough to change to a much healthier diet but it requires a reset of our relationship to food. That's a very important point. The latest nutrition science lends new weight to the idea that our health depends primarily on what and when we eat. It's not just figuratively true, it's absolutely true that we are what we eat. It's astonishing how many diseases are metabolic/dietary in nature, including many if not most cancers. And it's positively mind-blowing how effectively they can be treated by a combination of the ketogenic diet and fasting – both intermittent and prolonged.

Don't expect your doctor to approve of the new science, unless your doctor is exceptional. It's in their best interest to keep us dependent upon pharmaceuticals and continued medical interventions. There's no money in telling a patient to go home and fast and start eating healthier foods. Why would they want to cure a patient when they can string them along for regular visits and payments for a lifetime? Profit distorts medicine into something unrecognizable to the art of healing and something not remotely in our best interest. Don't forget that when dealing with doctors. Physician, heal thyself.

It's important to understand that this is not crack science or just the latest fad. It is cutting edge nutritional science touted by the leading experts in the field and backed by extensive peer reviewed data. And what it's telling us is nothing short of amazing. It's not magic because it's science – but when applied, it feels like magic. What it's telling us is that we possess extraordinary powers to heal ourselves. Our bodies possess their own intelligence, and given the right conditions, can work wonders of healing, repair and rejuvenation.

This is not to disparage medical science, as opposed to our profit based 'health care' system, but to recognize and celebrate the powers mother nature and evolution have bestowed upon us. I won't belabor the evolutionary aspects here. I've done that elsewhere and it's easy to find that information. Suffice it to say we are perfectly adapted to stone age living. We are not adapted to eating grains, processed foods, a high carbohydrate or high sugar diet, nor are we adapted to eating tons of food all the time. We are wired for intermittent fasting and feasting and a diet of natural whole foods. The modern diet, especially the Standard American Diet, is divorced from what evolution has built us for. That's why there is an epidemic of obesity, diabetes, cancer, etc.

We have lived in a state of natural ketosis for most of our history. This is what is natural for us.

When you are in the metabolic state of ketosis your body switches to burning fat for energy rather than glucose (sugar), which is the fuel provided by the modern high carbohydrate diet.

The results of being in ketosis include dramatic weight loss which is pulled from your stored fat reserves as your body switches to burning primarily fat for its energy. It also improves cognition because the brain runs more efficiently on ketones than it does on glucose. And ketosis stimulates increased autophagy, one of the most powerful and important processes in the body – which we've only learned about fairly recently. The modern diet suppresses this critical process vital to the body's ability to heal and repair itself, resulting in widespread and unnecessary human suffering.

Again, don't expect your doctor to tell you about this. What your doctor doesn't know might kill you.

Even if your doctor bothers to keep up with cutting edge science and/or pay any attention at all to nutritional science, they may well not mention it to you. There is a strong incentive in our for-profit medical system to keep people sick, dependent on pharmaceuticals and coming back for further interventions forever and ever, amen. There is simply no profit in telling people to go home, learn to fast and start eating a trulty healthy (low carb/high fat) diet based on organic whole foods.

The centrality of profit perverts our system, doctors failing to keep up with science (either because of laziness, no time or because it's not required) erodes the standard of care, and the entire bloated and distorted system suffers from a peculiar inertia that is stubbornly resistant to change.

Purely inertia. IOWs, our system resists change whether that's caused by concern for profits, bureaucracy, politics or sheer incompetence – it puts cutting edge medicine, and certainly anything unprofitable but worthy, out of the reach of patients – who are in so many ways just guinea pigs to the system. Profitable guinea pigs.

It's important to take your healthcare into your own hands to the greatest extent possible. The good and amazing news is that the current science allows us to become our own physicians. Not exclusively but to a much larger extent than ever before.

None of this should be taken as medical advice, disease is complex, every situation is different and life is precious, but it is important news to be shared (imho). This information will be life giving/saving for many as it has been for me, so please do share if you agree.

We can strengthen and rejuvenate ourselves from the inside out by choosing wisely what goes into our bodies. It's possible to do the ketogenic diet solely by focusing on the macro-nutrient ratios (from whatever source): high fat, moderate protein and low carb. But when food is viewed as medicine, the quality of the food becomes important. The simple rule of thumb is to (when possible) eat whole foods and all organic. Avoid all processed food, all sugars and anything exposed to insecticides, weed killers, etc. Also no meat exposed to antibiotics or fed corn (aka vegetarian fed). All corn in the USA is genetically modified so they can use Monsanto's weedkiller Roundup on it. Roundup is glyphosate, a known carcinogen which has been found in alarming levels throughout our food supply.

Our food can heal us but it can also kill us.

Eating healthy food that optimizes our biochemistry and boosts our bodies efficiency at self-repair, healing and rejuvenation is difficult in our society where almost all the food choices are bad. It takes work, commitment and effort to stick to healthy, organic whole foods in the correct range of macro-nutrients. I think it's especially hard if we continue to relate to food as primarily entertainment, fun or sensory gratification. Because sometimes a good diet is restrictive. But if we can transition to thinking of food as medicine, carefully considering the impact of each thing we eat, it becomes easier and the results (weight loss and feeling awesome all over) are self-reinforcing. After a catastrophic illness some years ago that cost me a good chunk of my intestines, I worked conscientiously just to avoid ingesting carcinogens and possible carcinogens with my food. About the only way to do that is to avoid all prepared foods and snacks. And even that is not always enough, thanks to the Monsantos of the world.

If you think the FDA is protecting you from poisons in your food, think again. As to almost every known carcinogen and intestinal irritant packed into, say a box of Cheetos for no good reason,* the FDA says the amount of the carcinogen is "safe." HA! As if the FDA knows how many carcinogens each of us ingests in a day and how well our individual systems are able to process poisons.

The whole point of canning and freezing foods is to preserve them, yet our canned foods and frozen foods are chock full of preservatives, many of which are carcinogenic or potentially carcinogenic. And, even if they are not carcinogenic, they may have side effects, such as irritating stomach linings, causing diarrhea or constipation, etc.

While I, of course, have heard of various low carb diets, I had not heard specifically of the keto diet until this week, when my youngish, fit physical therapist mentioned using keto recipes to make a pecan pie. I will take this second mention with a single week as a sign from the food gods that I need to look into this diet. Thanks again.

*As just one example of "no good reason,"' I compared a can of chick peas with no added processed chemical preservatives with a can of chick peas that did contain them. The chick peas in the can with no added processed chemical preservatives were a very slightly lighter shaded of beige than the can with preservatives added "to maintain appearance." For differences of that kind, we need to be ingest carcinogens all our lives?

I had gained over 65 pounds since retirement several years ago after a lifetime of weight between 155 to 165. (Prior to this, I could always eat whatever I wanted and my weight remained fairly consistent.) Last June/July I hit 225 pounds. I was having stomach problems and severe knee pain to the point of having to wear knee braces. I could not get up off the floor without holding on to something for support. I knew I had to do something.

With a little research I came across the Keto diet. Due to the fact I enjoy eating meat, I decided to try it out. The first week was rough. The worst was severe dizziness when awakening in the morning for several days and general malaise. I remember hanging on to my bed which felt like it was going to literally turn upside down like it was being tossed by ocean waves.

Soon everything turned out normal. Three and a half months later, I have dropped 50 pounds. My knees are no longer painful and I can put on my socks without major effort. I'm now 175 pounds and shooting for 160.

I do miss my homemade bread, mashed potatoes and rice though and am thoroughly sick of cauliflower. I now do a lot of my cooking sous vide. I can get tough cuts of grass fed beef such as beef blade and chuck at lower prices and then cook them for 24/36 hours at 132 deg F. to make tender, rare steaks that have the tenderness of beef tenderloin with even more flavor.

I highly recommend eating Keto.

@CB That's great to hear. Glad you found it and that it's worked so well for you. I miss my favorite carbs too. On rare occasions I'l take a break and enjoy some carbs. I did that Thanksgiving. I ate mashed potatoes and gravy and yeast rolls but no sugary stuff, no pie, no cranberry sauce. Didn't miss it. I fasted the next two days and was right back in ketosis. I think it's good to take the occasional break. I'll do it again at Christmas.

It is great. I'm going to bake some bread for Xmas dinner as a treat to go along with mashed potatoes and my tasty gravy. Then fast for several days as atonement.

BTW, I've had recurring bouts of acid reflux for well over a decade that could only be alleviated with expensive medication ($100/month). While on the Keto diet it has never reoccurred. I think it is because the food on a Keto diet tends to stay in the stomach for a much shorter time.

All my life I have never realized how much of what we consume affects our health, for better or worse. The vested industry "food pyramid" needs to be destroyed. The absolute worst food is the over priced, over processed and highly sweetened breakfast cereals we had started consuming in mass in the late 50's along with the fast foods with their addictive condiments containing sugar and unhealthy engineered fats and oils.

Bernstein is a Type 1 now well into his eighties; he got an MD after finding the ADA's recommendations made his condition far worse. The 101 book recommends staying in the 5 percent club -- referring to results of about 5 after a C1a check. Atkins is useful too, and very helpful on fat in the body, food, and diet. You may eat half carbs, half fat, but your body mandates that carbs be processed first, with the rest going into storage.
Mainly I was so angry at my C1a 6+ report and the threat of having to test or take drugs that I just changed everything. (It does help that I don't have to cook for family or friends.) Now I'm letting go kitchen equipment I'll never use again. Wednesday grocery flyers look like science fiction! Almost nothing that's fresh or non-GMO; amost everything packaged or frozen. I count myself among the fortunate.

Ain't that the truth!

After having limited my diet to protein, fats and vegetables for the last month, my body went into hyper complaint mode after breaking my diet at Thanksgiving. Apart from the holidays and celebrating, food is sometimes just fuel.

I think it's especially hard if we continue to relate to food as primarily entertainment, fun or sensory gratification. Because sometimes a good diet is restrictive. But if we can transition to thinking of food as medicine, carefully considering the impact of each thing we eat, it becomes easier and the results (weight loss and feeling awesome all over) are self-reinforcing. It feels good to feel good.

It does feel good to feel good. This is my goal for the coming year. Not only weight loss but to FEEL better.

Thank you for compiling all this great information. I will pass it on to my Sister who is now a cancer survivor.

He says we can't separate the body from emotions and trauma in medical practice. Much chronic illness is directly connected to trauma, based on studies where all with a certain disease had the same situations. I am not describing it very well.

The other thing to add to eating right, breathing, exercising, fasting . . . true feasting. Cooking delicious food from scratch to share with friends and family. That must have a place somewhere in the big picture. Yes? No?

All my beef, chicken, pork, and eggs come from a neighbor who free ranges all his animals. No antibiotics, hormones or grains. He silages the scrap from his gardens to feed his animals all winter.
Thanksgiving was a ham hock, dried beans and spices from my garden. Legumes are one of the healthiest foods there is. Many of my diabetic patients have lowered their A1C simply by incorporating legumes into their diets.
Even in Michigan I am able to grow several vegetables up until December and start again in April at the latest.
It's really not that hard to garden if you have the space but people today want what they want when they want it and they don't care about where it comes from.
Look at how California, that bastion of freedom, is growing some of their produce. Scary shit.

Are well worth it, even if only in containers. I had fresh greens, potatoes, onions, and carrots for xgiving. Grow what you can, and be choosy about what you buy.

The sad fact: the worst food is the cheapest. Poor people often can't afford a decent diet, or have access to clean soil.

Poor people, increasingly, can't afford organic foods; and they have no access to use of land at all. To get a roof over their (our) heads at all, we have few choices save to be stacked like cordwood in apartment buildings where we're not permitted to grow anything for human consumption (annual ornamentals only).

As for non-organic agriculture, the reasons for this are pure typical capitalism. Chemical inputs to crops are costly; farmers wouldn't be using them without reason. The reason is simple: non-organic hybrid/GMO farming per-acre yields are massively greater than organic legacy ones. And once organic/legacy farmers raise per-unit prices for their produce to keep per-acre profits similar to those of their more conventional colleagues (necessary as the baseline costs of the land itself are the same for both), the trap is sprung.

And healthy food -- real healthy food, not what the agribusiness-dominated government agencies say is healthy food -- becomes unaffordable for most of the 99%.

Organic food can be ridiculously overpriced, viz "whole foods", and becomes a class privilege. It's not just the poor who suffer from this. Between high housing costs, debt, etc., most people just can't justify to themselves devoting that big a chunk of the monthly budget to the best foods. Plus, large parts of urban areas are "food deserts", where there's no close supermarket. It's lucky to find bananas and oranges at the corner store.
That said, there are a lot of empty lots in low-density poor neighborhoods (no high-rises) where people are starting community gardens. However, urban soils are full of lead, brake dust (copper and zinc), soot, hydrocarbons and many other delightful ingredients. Sometimes people get a grant or find donors to help with bringing in decent soil.

The main problem from brake dust isn't copper or zinc; it's asbestos (microfiber particles are carcinogenic and can make their way into grown crops) and residual brake fluid pollution. Really yummy stuff. (NOT!)

Asbestos? I thought they phased that out. I'm more familiar with water pollution than soil pollution; brake dust runoff is responsible for much of the copper and zinc in waterways. I think Id be afraid to know the catalog of urban soil poisons.

Although large strides have been made in substituting ceramics and sintered metals (the latter being where your zinc and copper pollution come from), automotive brakes still use a lot of asbestos. Asbestosis/mesothelioma from brake dust is still a major threat to the health and lives of auto mechanics.

of Dr. Mason's lecture. It's really good and I will show it to some of my crew. Thanks for this OPOL. I believe this is critical information and it is getting out into the public knowledge too slowly. Lets speed this up. I saw your essay after I got home from work last night but didn't have the energy to look closely.
I enjoyed Mason's comment about reading labels and how the industry "disguises" sugar in the product by using words we may not recognize. This is my huge irritant, just tell me what is in my food in an upfront, plain way. I guess that if there is a bunch of shit in it that we don't recognize then our bullshit meter should immediately alarm and we should just put said product back on the shelf.
Anyway, I'm going to watch the rest of your links. I could go on about this forever. TY again.

You've changed my life. Since your last essay, I've stuck to intermittent fasting and I can't believe the difference in the way I feel, the weight I've lost, just everything! It has really changed my life. Even over the holiday - I allowed myself to indulge but stuck to my 16 hour fasting. I drank a little too much so I stuck to water yesterday and today, I'm past 20 hours of fasting, so I might go the whole 24 to really clean myself out!

Keep these coming! You are making a difference and changing lives (mine, anyway, lol)!
