Blessings, big and small

I'm a little light on substance this morning. Have had several days of cloudy/rainy weather, a couple of tornado warnings, and all around busy time.
Harvested my first potatoes yesterday. They were all volunteers from last season. But I had to make way for my late season corn, which needed to be planted.
They were small/medium size, but edible.
I'd guess about a 5 lb. sacks worth.
Have read where Cuba was the first to send help to quake torn Venezuela.
Funny how our ruling regime has exerted so much effort over the decades to fight communism, and kill millions of it's victims, just to see a poverty stricken communist country rush to aid another country in distress.

Happy tater harvest
.
plan to make a tater salad for a gathering on the fourth,
our local grocer has lots and plenty of area spuds available.
The devastating results of the twin quakes in VZ has kicked
the world into aid mode. US sends in the military. Never let a
disaster go without subversive opportunity development. Ho well.
Gearing-up for a heat wave upcoming. Gonna focus on keeping cool.
Thanks for the OT!

Tater salad
is my favorite way to eat potatoes. Healthier for you too.
The US military is good at moving rubble from one place to another. And the Clinton Foundation will be there shortly with gobs of taxpayer money. And they need more orphans,

Good morning e1, thanks for the OT. Cuba turns out
great numbers of medically trained persons because the government's goal is to help the people. These people can be sent anywhere, in moderate numbers, in the short term, so long as they get fed by the recipients.
The US is 100% for profit except for our war machine. We have no spare doctors and nurses outside of the military, we have no labor force other than prisoners and the military that is not on a strictly for hire basis. Need bandaids? CVS sells then, but only the military has some to hand out gratis. Etc.
be well and have a good one

Our military is for profit too. Like NASCAR, it is the product of all the sponsors that build the different parts of it and it travels the world displaying its wares and talents to drum up sales.
Once it fails to win races (impress), its sales begin to dwindle.
Thanks for the post.

Man, I wish I had a heaping plate of ‘ono Hawaiian potato salad right now…
Never considered macaroni in a tater salad
sounds "ono" (very good)
2 pounds elbow macaroni
12–16 hard-cooked eggs
8 red potatoes, cooked and cubed
2 tablespoons salt
2 tablespoons vinegar
6 cups mayonnaise
3 tablespoons Dijon country-style mustard
1 teaspoon pepper
1 sweet yellow onion, diced
2 oz package frozen peas, thawed and drained
Not a big fan of peas, may chop-up a green pepper.
Will also substitute Greek yogurt for 1/2 the mayo.
Aloha

Yeah, I’d skip or substitute something else for the peas as well
They say the amount of purines that peas contain can aggravate my (gouty) arthritis.
Definitely skip the peas and
substitute Greek yogurt or low/non-fat sour cream for half the mayo. Doesn't need the potatoes, but is in need of celery and green onions. (I add finely grated carrots to my macaroni salad because it doesn't add any taste but it ups that nutrients which are low in mayo heavy salads.
wow
How many servings is that, seems like a lot.
Does sound good though.
Thanks for the recipe.

Good afternoon, e1
Good you got a great addition to a meal or two!
I tried to get a case set for mediation asap, but July is a big vacation month for lawyers. Gotta do it Aug. 2d. Tomorrow, I am returning a retainer for a probate case that was supposed to be done via zoom. However, Harris County is densely populated, and court dockets are always long. I might not have been given a court date until September. I intend to close before then.
At any rate, one of my potato salad ingredients is dill pickle relish. Last time I made it, I turned up the squeeze bottle of relish, and it spurted out the oily liquid, drenching the whole bowl of potatoes and other ingredients, and ruined it. Haven't made it since, but if I get around to it, I will use relish from a jar, and spoon it in.
Thanks for the OT!

Thanks to y'alls tater salad stories
will add on to my list dill pickles, green onions, and celery.
Gives it a little crunch and zing. Never boring!

these:
A jar of pimentos
Mayo (for either regular mayo or a little bit if mustard is the main flavor)
mustard (for mustard potato salad only)
celery (or celery salt)
sweet onion (diced)
olives
either dill (for mustard) or sweet pickle relish if no mustard

Don't let retirement keep moving away from you like an innertube in the pool. I know you'll make it. And then a great sigh.
Also, I kinda like sweet relish over dill in my salad. And sliced black olives.

I do believe Google to be evil, so this comes as no surprise. Meanwhile, Joe and Mary Sixpack stumble blithely along here in the US, believing that nothing that dystopian could *possibly* be real, and that there is no way that our government would ever allow such a thing to be done to us by these evil corporations. Meanwhile, they turn a carefully-trained and curated blind eye to the fact that our government has now become a fully owned subsidiary of said evil corporations...
That's facism in a nutshell, to those paying attention: the subjugation of government by corporate power. Expect no help to come from the government in this case: this is manna from heaven for them, and is arguably the joy of their desiring, so to speak. I'm sure that someone down in the guts of a three-letter government agency wrote the spec for it.

I don't know if this counts
Ms. So made some delicious cucumber salad yesterday which I had with dinner. Try to eat some regular kimchi every night. My granddaughter loves kim, which is a dried seaweed. I eat it too, mostly in the form of kimbab, a rolled affair wrapped around rice and with some small pieces of beef, radish and scallions in the center. I don't really know the recipes for any of these.
There is a South Korean youtuber called Flower Lee in English. She's somewhat overweight, and obviously enjoys eating. Most Korean travelogue type youtubers are obsessed with the foods of whatever nation or region they visit. I enjoyed this particular video because she recently took a boat ride to Dandong, the Chinese city at the mouth of the Yalu River. I always like to catch a glimpse of the traffic on the Friendship Bridge across the river to Sinuiju, North Korea, on the South Bank. Someone said that the bridge built some time ago, by the Japanese Imperial Army, would only bear 20 ton loads. I saw when I watched there was a fair amount of traffic coming in from North Korea to China, but the trucks appeared to be about 40 ton gross weight if not a little more in some cases because I saw a three axle trailer among the normal tandem axled trailers. 40 ton gross weight is a net load of 20 tons. I also saw a locomotive pulling a few freight cars on the single rail line, next to the single lane road on the bridge the trucks were using. It was an antique and on the small side. There were a lot of North Korean consumer products for sale in Dandong shops, soju, snacks, ginseng, cosmetics, etc.
She visited the street markets, road the cruise boat for 30 min to get a better glimpse of the North Korean south bank of the Yalu. The ships on the river, the North Korean side, were poorly maintained, and rusty, except for a patrol craft. I was hoping she would visit the new Dandong Bridge the Chinese built to the North Korean riverbank near Sinuiju, some 10 years ago, 4 lanes wide, but she didn't go that far, as far as I could tell. It's supposed to open in October. 80 percent of North Korea's commerce with China goes through this region.
Doesn't take much to keep me entertained. Thanks E1 for the small blessings.
edit the new bridge is 4 lanes wide, not 8.

The kim dish
sounds like a sushi roll they serve over here. I like the dried seaweed and it's supposed to be really healthy for you. Minerals you cannot get anywhere else. We try to have some every couple of months. Love sushi.
I have watched a few travelogues in the far east, including North Korea. Like you, I pick out little details that most people overlook or are not interested in.
I'm easily entertained also.

Hi there, thanks so much for the OT. Summer fruit salad
is an incredible hit around here. I use whatever mix of fruits I can. Today it will be Bananas, Pink Lady Apples (I would use Honey Crisp but the only way I could get them would be to plant a tree and get my own.), Yellow/orange Melon cubed, Oranges. I try to get colors like red or blue fruits and our Kiwi are so good from southern France.
What brings it all together is a simple jus/dressing. It's fresh squeezed Lime; the zest of said Lime; local Honey. Stir honey into lime until dissolved. Use a little microwave if it won't integrate. It takes awhile to cut everything up and there is a cost factor, but boy oh boy is it a favorite and so simple. Blend the jus to your ratio of flavors. Some people add Coriander leaves but I haven't yet.

That salad sounds sooo good
We don't usually dress it with anything. But that jus is worth trying. What is the ratio of Honey/lime juice?
Also, we always use pineapple in our salads. Perhaps that gives it the sweet tart effect of your jus.
Anyways, love to experiment with foods. Thanks for the recipe.
Stay cool over there. I suspect the heat domes are not over yet.

We just got back from our apero with a French friend.
His sister and her husband are visiting from the states and we so enjoy their company.
Our fruit salad which in France is served at the end of the meal like a dessert, was a hit once again.
The ratio to start is for me about 1/3 cup lime, or juice of one lime, zest of one lime, two tablespoons of honey. I go for a balance of the two flavors and do want the hit of lime but not too bitey. How's that for exact?
ETA: I was using the word sauce for the dressing. I was jumped on by several French guys for not saying jus. Sauce is gravy as in meat gravy. So there. Now I've got it. We are so used to being corrected by French people. They have a way of letting you know the correct way of saying something French without offending. It's something we welcome as we need all the help we can get.
