To be specific, it has to do with Frederick II of Hesse-Homburg, sometimes called the "Prince of Homburg", who as a young man contracted a scandalous marriage with the much older and twice-widowed Margareta Brahe.
The astronomer Tycho Brahe was a distant cousin of hers, a couple of generations earlier.

The university was known at the time as "Ludoviciana" after Ludwig V, who founded it. The name of the star is Sidus Ludoviciana. As shown in the second photo above, it is the uppermost star in the middle, to the right of the double-star.

Sidus Ludoviciana (Ludwig's star) was named by Johann Georg Liebknecht, professor of theology and mathematics at the German university of Giessen, in 1722. Liebknecht thought he detected its motion and became convinced it was a new planet and named it Sidus Ludoviciana in honour of the king, the Landgrave Ludwig of Hessen-Darmstadt.
You will of course note that both 1722 [discovery] and 1736 [coat of arms] fall in the interval (1678 to 1739) of the reign of Ernst-Ludwig.

says it was the COA for darmstadt only until 1802. on the other hand, the image file linked from the homburg page says that was the COA for H-H from 1736 to 1866. meanwhile, the page for the image linked from the H-D page provided by TM says it was the H-D COA from 1902-1916.
the obvious implication (to me) is that leadership of these various houses passed to and fro amongst various branches of various families, and the coats of arms followed ...
