Peanut Butter and Jelly
In my copious spare time from being a 24/7 caregiver I run the Facebook page Food Holidays That May Get Overlooked (https://www.facebook.com/FoodHolidaysThatMightGetOverlooked/) that my niece started and I had to take over when she started working. Okay it is fun and everyone loves food. It also gives a place to share my recipes. Since today is National Peanut Butter and Jelly Day I thought you would like an alternative to Peanut Butter cookies that just put a dab of jelly on top.
Peanut Butter and Jelly Cookies
Amount Measure Ingredient -- Preparation Method

½ cup unsalted butter -- softened
½ cup sugar
½ cup light brown sugar
1 whole egg
½ cup peanut butter, chunky
1¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon vanilla extract
6 teaspoons raspberry jelly
Beat butter and sugar together until light and fluffy.
Add egg and peanut butter and beat until light and fluffy.
Add flour, baking soda, baking powder, and vanilla extract. Mix until thoroughly combined.
Refrigerate dough for at least 3 hours.
Heat oven to 375°F.
Shape dough into 1¼ inch balls, about the size of a walnut, and place on ungreased cookie sheet. Flatten with a fork in a criss-cross pattern.
Bake 9 to 10 minutes.
Remove from pan and spread ½ teaspoon of jelly on flat side of cookie. Top with another cookie flat side against the jelly.
Cool completely.
Makes 24 cookies.
Notes : Use your favorite jelly.
You need to spread the jelly immediately after taking them out of the oven so the jelly will have a chance to melt into the cookies and hold the two halves together.

Hello, we meet again
We conversed a bit about being care givers, over @DKOS. My care giving has hit a rough patch. If things go like this for a long time, its going to wear me out. Alternately, it could be signaling the end.

Caregiver Fatigue
My Doctor told me that there is now an actual diagnosis for caregiver fatigue. Then she doubled my stress tabs to see if I could get through with less stress which is sending my blood pressure sky high.

Stress induced disorders
We went to a conference where they talked about different thresholds caretaker stress disorders. Some quite severe with symptoms similar to PTSD. I am more on the overwhelmed side and kind of blue side of scale. My wife has been really bad for the last week or so. She can't even lift a toothbrush to her mouth. She uses an Ipad and a text to voice app, but her hand use and dexterity are almost completely gone. The dedicated speech device can be operated with a head mouse, but it takes forever just to say a sentence. Easier for me, but very unsettling, she has started sleeping allot more.
I am in and out of C99. I do the Friday Open thread and try to keep up with whoever stops by.
