The tenth of tenth

Found this recipe today which is
intriguing. It is basically soybeans
which have been dried, salted and
fermented. Called Chinese Black Beans.
Used to spice-up dishes giving them a
umami essence. Have you ever heard of this?

One is pork, the other chicken. Makes we want
to revive the wok.

Umami means "pleasant savory taste" in Japanese
.
For many years, only four basic taste groups
were recognized: sweet, sour, salty, and bitter.
Umami, often referred to as the "fifth taste,"
is a more recent revelation.
Glutamate has been utilized in cooking for centuries. Fermented fish sauces, abundant in glutamate, were popular in ancient Rome. Similarly, in medieval Byzantine and Arab cuisines, fermented barley sauces rich in glutamate were prevalent. Fermented fish and soy sauces boast histories dating back to the third century in China.

Maybe if this catches on,
our soy bean farmers won't go bankrupt, now that China is not buying soy beans from the US.
Thanks for the tariff, Trump.

Speaking of bankruptcies,
apparently this is how the game is played now:

Nice work, if you can get it. I'd like to get me some o' that "off-balance-sheet" financing...
And, on edit: is anyone else as happy as I am that they gave the Nobel Peace prize to a female Venezuelan peace activist, rather than allowing the Cheeto to bully/buy it? They should now retire the prize for the remainder of his term.
Twice bitten, permanently shy.
I'm glad some Argentinian got the prize

just hope the trumpet's ego
is not so bruised that he does some
extra-judicial assassination attempt.
We are a bankrupt nation.

Oh, you know
that that is going to happen. The man's ego knows no bounds. It'll just be interesting to see how they do it this time- the whole "committing suicide by shooting oneself in the back of the head twice while slipping on a banana peel in the shower while holding an energized hair dryer on a sinking ship" thing has already been *done*, you know. They need to show some creativity here...

a favorite ingredient
Often use asparagus, fresh green beans or broccoli with quick stir fry technique in frying pan or wok with garlic and ginger. Optional add sliced 1 lb beef marinated. Mixed in order 1 T oyster sauce, 2 tsp soy sauce, 1 T dry sherry, 1/2 tsp sugar & 2 tsp sesame oil set for at least 20 min. can substitute oyster sauce with soy sauce and use a dry white or rice wine for sherry.
Still yourself, deep water can absorb many disturbances with minimal reaction.

Yumm

Just ordered a new wok
from Joyce Chen. The old one
had one of those Teflon coatings
which was flaking off. Do not want
that kind of spice.
Cheers!

I didn't know this "black bean" dish
...you described QMS. But I don't know much about food. I'm spoiled by Ms. So who has been a cook for most of her working life.
My most favorite "black bean" dish is Jjajangmyun. Maangchi the well known South Korean cook, (re)published this just recently:
Noodles with blackbean sauce
Jjajangmyeon 짜장면

Jjajangmyeon
I love the taste of the jjajang (black bean) sauce! Traditionally, a large brown ceramic pot of "black bean paste" usually sat outside of traditional Korean homes and even on the patios of village and city homes.
Doinjang is fermented soybean paste, yielding a rich taste. It is used to make another black bean dish, Doinjang Jjigae, A soybean bean paste base soup stew.

I like this Korean song "Set Sail," performed by Aki:
아즈마아키(東亜樹) - 배 띄어라(船を浮かべろ) Aki Set Sail (Launch the Boat) MBN Han Il Top Ten Show
This is a rough computer translation below. Sounds like a sailor's drinking song.
Launch the boat, launch the boat, my friends Launch the boat and let's go quickly East, west, south, north When the winds blow When do you always wait When the wine ripens and the moon rises Isn't this the time? Launch the boat, launch the boat, my friends Launch the boat and let's go quickly If the wind doesn't blow, row When the wind blows, raise the sail Friends across the river Should I sit and wait, you miss me and don't cry. Oh, launch the boat, my friends Launch the boat and let's go quickly Launch the boat, launch the boat.

Can absolutely relate to your song
