I'll be late for my own funeral.
Sorry about the late post. Was up late last night with an evening dinner engagement with family.
We were at the best steakhouse in Portland, The Ringside, and I splurged and had a 12 Oz. Dry aged bone_in New York cut priced at $84.
What was the occasion?
My granddaughter and her SO were flying out today to spend Christmas with his parents in Iowa and will not return until after New Years.
I'm sure those steaks are cheaper in De Moines.
So, I'll open the thread with this.
What did I miss this morning?

Extreme weather event
forcast for Lewis County, Washington today. They are calling it an Atmospheric River bringing drenching rains and rising river levels.
The last time we had a storm like this I followed up the next day with a trip up to the farm to witness how high Otter Creek, which runs through my parcel, rose.
That was on December 23rd, 2019.
It was up about 2 ft. Which wasn't that bad, but what I saw shocked and delighted me.
Peering down the embankment, I saw a 2 ft. long salmon spawning with the smaller male dutifully following.
As I recall, the fingerlings grow and migrate downstream to the sea. They then spend 5 years out at sea before returning to where they were born.
I should make a trip up there and see if they've come home.

I've been growing away from red meat for a few years now. But every once in awhile I'll splurge for a good T-bone, Porterhouse or Chateaubriand.
I haven't stopped eating red meat, just cut the portions down a lot.

The latest outrage is that AoC wanted to head an important committee, Pelosi didn’t want her to so she whipped the vote to get people to vote for a 74 year old man who has just been diagnosed with esophageal cancer. Apparently she did it from her hospital bed in Germany whilst she is recovering from hip surgery.

Ringside
Not living in area anymore, but read where Ringside during lockdown decided to sell their steaks. The line went all the way up Burnside. It seems that over the years, the Portland area lost a lot of steak houses--just not popular anymore including those places where you got a free meal if you ate an insane porterhouse I believe it was. Is there any place that even serves prime rib anymore. Seems gourmet hamburgers has replaced the traditional steak in the area.
The Portland dining scene
has recovered magnificently. Plenty of room for growth too. Food courts are popping up everywhere offering some amazing new dishes.
The culinary school scene is thriving and turning out innovative chefs with a name to build.
It's starting to be fun again to go downtown Portland and the Vancouver waterfront.
Prime rib was on the menu last night.

a ribeye and/or prime rib person: rare, a little butter, a lot of pepper.
Cooking is entirely optional, in my view, and is often just a waste of time. My late brother-in-law used to order steaks by saying "Knock the horns off, run 'em through a warm room, and slap it on a plate!". I can get next to that.
A good steak tartare or carpaccio is a true treat, just as is sushi/sashimi in the case of good fish. But for me, once beef has anything resembling a grill mark, it has pretty much gone far enough. Beef in a recipe with a sauce is a different story, of course- but if it is supposed to be exposed, I like it *exposed*.
My cardiologist refers to me as "the annuity". Okay, fine...

My Dad was a rancher.
We raised our beef. We kept a freezer full of beef at all times. We never ate a piece of beef rare. We ate beef at least twice daily. Pork, bird, and seafood were rarities. Dad insisted that a lot of possible unclean knives and saw blades here and there during processing would pass some bacteria to people.
If we can't grill rib eyes or prime rib, we just wait for the right weather. Salt, garlic powder, black pepper. Charcoals are mesquite. Grill mark both sides, set off flame to cook to medium, med. rare for Dear One, med. well for moi.
If traveling, and gas grill is the only option, I use a special Mesquite rub.
When I lived in Houston, I went to renown steak houses. I asked for well-done, and the chefs would try to dissuade me. What I would be served was medium well. What I wanted in the first place. When I asked for it, I would always have to send it back for more grilling.

I favor steaks with just a little salt
and nothing else. No steak sauces, marinade, or spices.
E2 can sometimes be embarrassing, has to have ketchup on all meat. I prohibited her from ordering a steak last night. She had crab cakes.

I once often cooked an elaborate
stove top steak, red wine, butter, fresh sliced mushrooms, salt...but I went back to my Texas roots.
Rib eyes and prime ribs SHOULD be marbled enough not to worry about being tender, and red wine is a tenderizer. Yes, it adds flavor, but if you have a good cut of meat, it is not necessary. Save it for slow cooked roasts.
I would go hungry before I would desecrate the steak with marinades and bottled sauces and so forth.

I’ve been cooking all my meat in the crockpot
Put it on low and let it cook for 4 hours and it’s very nice and tasty and very tender. I reuse the sauce like people do sourdough and add extra stuff if it gets low. One of my favorite ingredients is Italian dressing and beer. Takes about 5 minutes…

Roast:
Some chef in Austin suggested to salt and pepper the meat, coat with flour, brown each side in butter, then roast in the oven or crock pot with red wine up to level with the meat.
That searing adds taste and also keeps the meat moist, much like the initial searing of a grilled steak.
