does anyone know what has happened to the National Health System (NHS) in GB in the last five or so years? It used to be touted as one of the best social safety nets on the planet. Now I'm hearing bits and pieces of it are being privatized and wait lines, misdiagnoses are multiplying.

Can anyone help with this low information, but interested reader?

Macron is sticking with his pre-election party planks, and dismantling as much of the public owned services and utilities as he can. He said he is moving fast every day so those who won't like it can't keep up, or something like that. Coming close to selling off monuments when he offers Paris airport for sale.

It is the same problem world wide driven IMO by poor dietary recommendations. Sugar, processed grains, and vegetable and seed oils are killing us and causing most chronic disease responsible for our global ill health. However those industrial interests (Coca-cola, kraft, etc.) still hold the reins of the health assns. and the recommended diets.

More rain expected. The spring is running strong and the pond is full this time of the year. Time to bush hog and prune trees back on that corner of the place. Still have not finished mowing the big field. The deer like to bed down there, and since we don't let folks hunt here they are almost tame.

running errands in preparation for Christmas Dinner next week. Have decided to do cornish game hens this year instead of goose. Partly because I've had trouble finding a really good goose the last couple of years, and partly because it's a lot of work, and partly because it goes best with potato dumplings and sweet & sour braised red cabbage, all of which my Sister and I are staying away from this year.

Been playing around with recipe ideas for these sweet little hens, but instead of preparing them in the more traditional way, I've decided to spatchcock them, lay them over some butternut squash, and baste them using olive oil infused with Indian spices. Perhaps not the typical German Christmas feast, but hopefully a tasty one nonetheless.

Will be doing a dry-run with one of the hens today to get an idea of how long I need to roast it once spatchcocked. Afterwards, I'll take the bones, make a little broth, and use it for the gravy. Rounding out the main dish, I'll will be including mashed potatoes on the menu for my brother-in-law, garlic and herb roasted parsnips for my Sister, fresh carrots and peas with dill butter for everyone, and roasted broccoli with dijon mustard for moi.

Still working on my wine list. Any suggestions?
