OT WE 12 AUG 26 ~ Stuffies
I would like to share with you a regional treat called stuffies. It is basically a large local clam known as a
Quahaug raked out of the shoreline mud and sand. Very thick shelled. Opened and chopped-up (some
remove the black bellies first), then mixed with chopped celery, onion and green peppers. Crushed
crackers tie in the stuffing with Worcestershire sauce, Parm cheese, S & P, butter and flour. A rich
mixture. They are then baked / broiled in the half shell. Yummy delicious! Any local clam works with this.
1 cup chopped littleneck (quahog) clams and liquid
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup finely chopped green pepper
4 tablespoons butter
2 tablespoons flour
1 tablespoon grated Parmesan cheese
1/4 teaspoon salt
Dash of black pepper
Dash of Worcestershire sauce
12 Ritz crackers, crushed
1 tablespoon butter, melted
Paprika

and another version-
20 whole quahogs, shells washed to remove dirt
1/2 pound butter
1 pound chorizo, diced
1 pound onions (about 2 medium), diced
10 ounces red pepper (about 2 large), diced
10 ounces celery (just under 3 cups), diced
1 (14 ounce) box Bell’s Traditional Stuffing
1 tablespoon Old Bay seasoning
1 ounce (2 tablespoons) tabasco sauce
1/2 ounce red pepper flakes (about 2 1/2 tablespoons)
1/4 ounce fresh parsley, chopped (about 1/4 cup)
Steam quahogs until they just open. Set the liquid aside (do not discard). Shuck the quahog meat
(saving the shells) and roughly chop. Set aside.

About to cook some more green beans. Boy, have they been prolific this summer. Cook them in the instant pot with onions about 10 min/lb.
This evening we're having them with chuck eye steak, a cheaper ribeye to my mind. Going ahead and cooking chicken thighs today for hired help tomorrow.
Rained all day yesterday, close to 2". I'm not complaining about rain in August. Usually we're dusty dry this time of year, but the strong El Nino has created a wetter summer for us. Sure has moderated the weather.

Chuck eye steaks are tender and juicy. They are hard to find in the meat bin because they are the first to sell out.

What will she do when you shutter your office?
Gathering ingredients to build a chili for a weekend gathering.
Will also make a skillet cornbread. Sounds southwestern sorta.
When I lived in AZ, a circle of friends would gather once a year for
a chili cook-off. Some like it hot, mine are on the mild side.
Might use this as a framework -
▢ 1 pound bacon, chopped into small pieces
▢ 1 pound ground beef
▢ 2 medium onions, diced
▢ 1 teaspoon salt, plus more to taste
▢ 1 tablespoon cumin
▢ 1 tablespoon chili powder
▢ 1 tablespoon garlic powder
▢ 2 tablespoon sugar
▢ 3-4 tablespoon tomato paste
▢ 1 (28 ounce) can diced tomatoes
▢ 1 (28 ounce) can tomato sauce
▢ 2 (15 ounce) cans red kidney beans, drained (not rinsed)
▢ 2 cups broth, (beef broth, bone broth, chicken, vegetable) plus more as needed
Will substitute ground pork for the bacon. Already cooked the beans yesterday. Also.
I skip the tomato paste. A bit of cider vinegar, cocoa and maybe corn meal to thicken.
Some herbs from the garden, hot sauce on the table with sour cream and shredded cheddar
as garnish. It's a make ahead dish to minimize heat in the kitchen on the day of.

sounds pretty good. I would skip the tomato paste, and add a pinch of cayenne, not for heat, but to spark flavors. My secretary will put in a few hours a week from home for a month or so, just to make sure there are no cases out there that never officially closed. She has worked in 2 clerk positions for the county, and is being recruited to work as the county judge's secretary, but the experience she had with courthouse cutthroat politics has kept her from applying for that job. More than likely, she will work for a friend who has a small construction company.

Not sure about this story
But Breaking Points covered the problems aboard ship, caused in particular by the extended time at sea without a port call. I'm not sure about "attempted suicides" that are reported here either. In any case I believe the psychological state of those sailors at sea for that long, on an overly long deployment is beyond the breaking point. I don't understand why the schedule for their relief on station isn't known. Why not?

I had read a couple of sources
on the attempts to jump overboard. I believe that is true. If so, the CENTCOM commander would have good reason to send one of his advisors to give the sailors a pep talk. Anyway, Facebook will be alive with posts coming from family members, as well as the sailors. Time will tell.

I think the CentCom commander and one of the wh VIPs visited earlier once before. The part I don't get is "attempted." I can tell you that if one wants to commit suicide on a ship, it's quite easy to do so. Just go out on the catwalk at night and jump, no one will notice, until you don't show up at your duty station. If one carries this out, a few hours at least will go by, before anyone notices your absence. Without a radio beacon, it's very unlikely you would be found, if ever, before you had drowned. I've seen sailors act out while deployed threatening officers assaulting MPs, etc. But they had been drinking. Nevertheless, I had little doubt lives were in danger. The MPs contained it.
I recall during one spell at sea, when a couple of jets collided, seeing one of the aircrew still alive waving to the ship from the water, not even 25 yards away. Then he disappeared from sight, as the ship cruised on. It took a while to turn around. When another helo went out to look for him, they couldn't find him for awhile, after they had just passed him. They did find the flight crewman I saw, but he had already drowned.
Then there are the inevitable Dear John situations that arise when you have been away from home for so long.

pals, who later became a lawyer in Houston, was in the Navy and saw action in Viet Nam. The stories he told me of long term patrols would make you sick. He suffered from PTSD and might have committed suicide, as he wished to do.

I see that Larry is discussing this topic with Danny. His discussion is wide ranging, while mine above was specifically addressed to the carrier experience. I've had a lot of exposure to this subject matter, some in administrative law, some army experience. Ship duty sucks. An overly long tour is worse. I'd even assume that 24 hr ops are involved because it's a real world wartime experience. I used to brief flight ops, so I think I've got a pretty good idea what they're doing out there and its exhausting. The food situation reflects on the super long logistics train. I used to know a supply officer type casually years ago, and he told me the food and consumables for crew use were booked "locally" as he had contracting authority. There is no "locally" where they are, it's as remote a duty station for a fleet as you can get. No wonder they're complaining about the food, and hygiene and cleanliness supplies.

Look like smallish clams unlike quahogs.
Turns out size matters. Both are hard shell but the
'little necks' are about 8 clams per pound whereas
quahogs are about 3 per pound. Not sure about the neck
thing, but when you open them, there is a penis looking thing
that is evident. Maybe that is the neck?
