Faintly at first, a whiff of diesel on the wind – how a fuel spill far at sea could be connected to your tuna.
Ahead of us was a rainbow coloured fuel slick, probably over 200 square meters of it, out in the middle of the ocean.
It's good to know where your tuna is coming from. Check for the dolphin icon on the can to make sure "no dolphins are killed harvesting this tuna."
Mediterranean Diet

Eating a Mediterranean diet or other healthy dietary pattern, comprising of fruit, vegetables, legumes, and nuts and low in processed meats, is associated with preventing the onset of depression, according to research. A large study of 15,093 people suggests depression could be linked with nutrient deficits.

A limitation of this study was that the results are based on self-reported dietary intake and a self-reported clinical diagnosis of depression. More research is needed to predict the role of nutrient intake for neurophysiological requirements and identify whether it is minerals and vitamins or proteins and carbohydrates that cause depression.
We can always test this on ourselves. Try the Mediterranean diet for 6 weeks and see what happens.
KALE, a superfood
Kale: Health Benefits & Nutrition Facts
Kale is a leafy green that appears on many lists of trendy superfoods, and probably with good reason. Kale is highly nutritious, containing high levels of vitamins, minerals, and brain-boosting phytonutrients.
GREEN SOUP
Ingredients
1 bunch of spinach 8 oz.
1 bunch kale, 8 oz.
4 -5 green pinions, sliced white and green parts
1/2 cup loosely packed cilantro
pinch sea salt
1 - 2 Yukon Gold potatoes
1 medium yellow onion 1-1/2 tbsp olive oil
dry sherry
1 - 2 cloves garlic, finely chopped
3 cups vegetable stock
juice of 1/2 lemon
Wash greens, thoroughly, trim off stems and slice the leaves. Combine the spinach and kale, green onions, cilantro in a large pot with 3 cups of water and pinch of salt. Chop up potatoes and add it to the pot. Bring the water to a boil, turn down the heat, cover the pot and let soup simmer for 1/2 hour.
Meanwhile, chop the onion , heat the olive oil in a skillet and cook the onion over a low flame until it is golden brown and soft. This could take 1/2 hour. Don’t hurry, stir once in a while and let the slow cooking develop the onion’s sweetness. Deglaze the pan at the end with a little sherry and add this to the soup.
Add enough of the vegetable broth to make the soup a soup and puree the soup in batches but not too long because potatoes can turn gummy.
Return the soup to the pot bring back to a simmer, add black pepper, a pinch of cayenne, and lemon juice.
Serves 4 - 6

This is a recipe that is so simply tasty that I have never tired of, even after over 20 years of regular preparation.
I also like the flavor of kale in a vegetable stir-fry.
Kale and Potato Soup with Red Chili
This recipe came from The Greens Cookbook by Deborah Madison. A wonderful book that all veggie lovers should own. The recipes in this book are from the Greens Restaurant when it was in it's hey-day.
The Stock
The ingredients of this soup supply plenty of flavor, so use water to prepare a simple stock using the stems of the kale.
The Soup
1 bunch kale
3 Tablespoons virgin olive oil
1 medium red or yellow onion, diced into ½ inch squares
6 cloves garlic, peeled and sliced
1 small dried red chili, seeded and chopped, or ½ teaspoon chili flakes
1 bay leaf
1 teaspoon salt
4 medium red potatoes (about 1 pound), scrubbed and diced into ½ inch cubes
2 teaspoons nutritional yeast (optional)
7 cups water or stock
Pepper
Creme fraiche or sour cream (optional)
Using a sharp knife or kitchen shears cut the ruffled kale leaves off their stems, which are very tough and take a long time to cook. Cut the leaves into pieces roughly 2 inches square, wash them well, and set them aside.
Heat the olive oil in a soup pot, add the onion, garlic, chili, bay leaf, and salt, and cook over medium-high heat for 3 or 4 minutes, stirring frequently. Add the potatoes and the yeast, if using, plus a cup of the water or stock. Stir together, cover, and cook slowly for 5 minutes.
Add the kale, cover, and steam until it is wilted, stirring occasionally. Pour in the rest of the water or stock, bring to a boil, and then simmer slowly, covered, until the potatoes are quite soft, 30 to 40 minutes.
Use the back of a wooden spoon to break up the potatoes by pressing them against the sides of the pot, or puree a cup or two of the soup in a blender and return it to the pot. This will make a unifying background for the other elements.
Taste the soup for salt and add a generous grinding of black pepper. If possible, let the soup sit for an hour or so before serving to allow the flavors to further develop. If desired add a spoonful of creme fraiche or sour cream. Serves 4 - 6.

I add some kind of spicy hot ingredient
to almost everything I cook. Some time I'll add a few recipes using wasabi, which I adore.

I have noticed that there is not much commentary on the Morning Open thread until later in the day. Often I do not even get one comment until after 11 am Eastern, especially now that smiley is traveling. He and I seemed to be the only early morning folks here. Lotlizard and Lapsed Lawyer usually visit and post before the Morning Open Thread is posted.
The next couple of days, I will be scarce myself because we are having back to back overnight guests this week. Tomorrow, my MIL and SIL are coming through on their way north and are spending the night with us. Then we turn right around with overnight guests on Friday. I will be hustling with laundry and all on Thursday.
I am looking forward to hearing the Pope's speech to Congress and I am very much hoping the main emphasis of that speech will be climate change. It may take the Pope to shame world leaders into taking drastic steps on climate change and the US should be leading the way. Just another reason why I am supporting Bernie for President.

We did away with it
the TV, that is. We got rid of the satellite and we can only get one station here without, so we just do not turn it on. After the initial withdrawal period, it has made our lives much less stressful.

reminds me of the good old days
when shaharazade and I first met we lived in a small town on the Oregon coast, pre-cable. We could get one radio station that played mostly country and western tunes of the day (Hey, did you happen to see the most beautiful girl...) and one television station. But if we visited friends on the other side of the hill we could get a different tv station.
I had a thought today as we walked along. As we get older we see things as they were, as well as seeing things as they are. Portland is growing, getting more developed. There's a little shopping mall area that was redone but when I look at it I can feel how it used to be. Obviously that's different from how newcomers see it.
