Couples Cooking: Chicken Fajitas without a fight

Take a break from war, war, more war, and The Great Reset, and get an insight on cooking.
No, this isn't expert chef stuff. This is one person introducing the other person in the house to Tex-Mex cuisine.
Ordinarily, you marinade the meat and vegetables ahead of putting them on the grill. With the f***ing time change, it gets too dark to early to grill. Thus, one shifts to stove top.
Now, A has eaten Tex-Mex forever, B has eaten reasonable facsimiles. A is transitioning B to the real deal.
Now, B was agreeing to grill, but...B weaseled out because dark, blah blah blah.
So, A stepped up to the skillet and discovered we had no orange juice! B went to town, got some.
For grilling, one marinades the meat and veggies. For stove top, just saute chicken, strips of bell pepper, slices of onion in olive oil, and get them softened and sort of caramelized, then add a mixture of orange juice, lime juice, a dash of cayenne, and a healthy sprinkle of cumin and garlic power, stir, and add to the pan. Stir, reduce the marinade, put the flour tortillas over a flame for a couple of minutes, load it with the mixture, top with sour cream, salsa, grated cheese,and jalapenos. From prep to table is 20 minutes or so.
So, the couple's aspect was slicing the chicken breasts. A didn't get it done quickly. A claims a bad knife. B had to come to the rescue, since A had the oil heating, and it began smoking, and B yelled, "You always burn shit, let me do this!" Thus, A resumed checking the internet for emails, slugged down a beer, which A wanted to do while B grilled, which didn't happen. A gave moral support. And sliced the veggies, grated the cheese.
The reason I didn't give amounts of orange juice, the main ingredient, or lime juice, or amount of garlic or cumin or red pepper, that is up to whomever likes whatever. To each his own on the amount of those essential ingredients. I can say, for a bell pepper, a small onion, and 2 chicken breasts, the marinade was just under 2 cups. heavy on orange juice, much lighter on the lime juice.
Hope you all try some of this, and remember: All you have to do to get out of cooking to go sit on the front porch and drink beer is to burn shit as soon as you start "cooking". LOL!
BTW, this marinade works for beef fajitas as well.

I hope you enjoyed a few minutes away from this cruel world and constant bad news, and got ideas for a future meal, and the trick to avoid cooking it.

Lime and orange are great culinary compliments to many dishes, especially lime, to my taste. But here's one with orange.

Tried and true olive recipe …

Drain olives and put in bowl
Slice some orange peel and dried tomatoes. Add some rosemary sprigs and a bit of olive oil.
Heat at a low temperature in the oven and enjoy warm with your beer.

But getting that done without "interference" from you know who would be an issue.
So, I hope things are all good, all the time in paradise, chica.
I am having a tough time adjusting to this damn time change. I prefer grilling as much as I can, usually several times a week, and abruptly, I can't because of darkness.
They sell poles. They sell lights. I must make a shopping trip.

@janis b It is the sun going down. I need to set up some lights around the patio, probably on poles, so we can see what we are grilling. Flashlights will do in a pinch, but not too workable. My porch lights do not light up the patio where the grill is situated. I see people hanging strings of led lights, so that might be an option.
I do not get home from work until 5, and tomorrow, for an example, I have an interview that won't start until 5:30. I may not get home until 7 p.m.
Oh! just in time for whatever B decides to cook! Woohoo!

you either have to move the grill to a position well lit, or add some more lighting. Lighting is fun, enjoy.

We use them camping and for things like grilling. Portable, they deflate and pack flat when traveling, and self maintaining with sun exposure (no batteries to replace!) They have a tab for easy mounting overhead too.

@Lookout I stayed at a cottage in Colorado Springs recently, and the patio was lit up by a string of lights, like Christmas tree lights. B had no trouble at grilling after dark. We will look into the solar powered lights. Thanks for the idea!
I will check out the video shortly. I just received a threat from a client's wife, must go file charges right quick.
Sigh...some days are just shitty.
